Crossbreading beetwen Duroc and Pure Iberian produces a ham with a greater lean. Iberian black pigs are adipogenic.

In other words this legendary and select race has the quality to store fat under its skin and between its muscular fibres , which gives Rubistierra´s ham meat its unique texture and exceptional white streaks, aroma and smoothness.
